I tasted the marinade, and WOW is it great! I too omitted the flour, as I have celiac. Flour in marinade just seems wrong, anyway. I own ...Thank you for your write-up on this recipe. I own the book but don't have it near me at the moment so googled it and came across your blog. I am a vegetarian but now that my kids are back in school, want to start eating more vegan foods (my hubby is omni and my kids are varying degrees of veggie/picky) and am using a few of Isa's books (as well as some others... I have two of Donna Klein's opened in front of me while I'm menu planning - her rosemary lentils were delicious and easy) so I'm SO HAPPY to have found your blog. I'll be sure to go through some of the archives as you do a great job of documenting what you change in the recipe and commenting on what you think! I appreciate you taking the time to have done this project and your honesty. Are there other books that you are loving these days or would you be willing to share your favorite cookbooks? I love Deborah Madison's, Ottolenghi's Plenty, and The Sprouted Kitchen lately but am always interested in what other veggies/vegans actually USE and LOVE on their shelves. Thanks!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-7393606042219043435.post-54829929408065834232013-08-23T15:06:20.284-07:002013-08-23T15:06:20.284-07:00May I suggest you this other book for you to explo...May I suggest you this other book for you to explore more into this healthy and kind cooking. I also mixed the wet and dry ingredients separately, and took an immersion blender to the wet ingredients before adding the dry ones.

I served the cutlets with the Veganomicon's recipe for mushroom gravy over my recipe for mashed cauliflower with roasted garlic. Loved it! My meat-and-potatoes husband declared the cutlets to be "inoffensive," said he'd eat them again, and suggested that they'd be much better fried in butter. :P Still, it was a much better reaction than I'd hoped for.

The next time I make the cutlets, I'm going to add a bit of chopped jalapeñ and artichoke; the recipe is a great base for other flavors.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-7393606042219043435.post-75864016716339635472012-05-25T16:58:38.697-07:002012-05-25T16:58:38.697-07:00just a quick suggestion as i have made a similar r...just a quick suggestion as i have made a similar recipe for myself. When roasting the eggplant and tomatoes, dont use the parchment paper. Toss them in some seasoning and olive oil, and they wont stick to the pan.
